1/2 | cup | red bell pepper, coarsely chopped | |

In a small bowl, beat eggs. Add milk, red bell pepper, spinach, salt and pepper and stir to blend.
Pour into a lightly greased skillet. Cook and stir over medium heat until eggs are nearly set.
Serve immediately.
